If not, no they don't keep spawning while you are away. They only will spawn if the chunks your farm are in are loaded, or are in spawn chunks with a chunk loader. They dont have the restriction of 128 blocks for other mobs to despawn, just need to be in loaded chunks. I am not having a problem with the golems spawning, they spawn. The lava is at their head level with water at their feet level to transport the drops.

Iron golems will spawn in a 17x13x17 area centered around the village center. So it will spawn 6 blocks above the village center block and down to 6 below the village center block.
