2: let the dough come up to 65f. the warmer it is, the more likely it's going to stick (and be harder to stretch) 3: your 1/1/1 mix is probably overkill. I drop my flour into a bowl of flour to toss it, and then cornmeal on the peel. 4: make sure your pizza is not sticking off the ends of the peel.
